These are known by many names, including Mexican Wedding Cookies, Snowballs, Italian Butter Nuts, Southern Pecan Butterballs, Snowdrops, and Viennese Sugar Balls. Call them anything you want, as long as you call them delicious. I used my William Sonoma’s Essentials of Baking recipe for this one, and they came out great.
It’s about as simple a recipe as you can have – flour, butter, salt, sugar and a little vanilla. Add some nuts for crunch and a soft flavor and you have a baking classic.
I tend to like my cookies a bit soft, and these firm up pretty quick, so on my own personal scale I would only give them 7 “yums”, but as cookies in general go, as well as ease of cooking, I give these a 9.
