One of the best kept secrets in baking is the simple use of parchment paper. Unlike wax paper, you actually use this stuff to line your cookie sheets. It goes right into the oven and I have yet to find anything that sticks to it. Let your cookies cool right on the paper (while you re-use your cookie sheet for the next batch) and you can then take the edges (making a “U”) and literally dump the cookies right into a storage container. No fuss, no muss. You might not ever use your spatula for cookies again! It’s cheap, re-usable and it’ll save you time in not having to scrape your cookie sheets clean as well. Have a few rolls on hand.
